RAW CHOCOLATE TREATS

Yesterday I got a little creative in the kitchen and decided to make my second ever Raw dessert, don’t get me wrong; I love raw anything – I just try not to have anything sweet; including ‘healthy desserts’ in my home as I don’t have a switch in my brain that tells me half a cake is enough. Even if it’s made from all organic and natural ingredients, eating half a cake is not exactly ideal. Only time will tell how much self restraint I have. This little gem I basically improvised, picking little bits of a few different recipes from different Raw bakers and combining them to create a taste I knew I’d love and that was pretty simple. This is literally the most easiest dessert you will ever make.. Ever, and it only takes 10-15 minutes to prepare.

 

The beautiful thing about this is you can even make little individual tiny cakes depending on what you’re making them for, if you have serious sweet portion control issues like myself I’d recommend making mini cakes therefore you won’t be tempted to cut yourself half a cake as your portion for dinner or even breakfast.

 

Ingredients: 

Base: 1 cup almonds
little less then half a cup of shredded coconut
3 tablespoons cacao powder
10 medjool dates, pitted
1 tablespoon coconut oil
Process all ingredients in a food processor until crumbly. Press into a pie tin

Filling: 1 orange, squeezed (depending on how orangey you want the cake you can squeeze more oranges)
1/2 cup coconut chocolate butter or cacao butter, melted (I used Loving Earth Chocolate butter)
2.5 cups cashew nuts
1/3 cup organic honey 
3 table spoons of cacao powder
Process all ingredients in a high speed blender until smooth and creamy. Pour into pie tin and place in freezer until hard to touch (about 20 minutes). 

You can keep your raw deserts for up to a week and a half and if you’re lucky 2 weeks; but don’t push it.. Ain’t nobody got time for sour desserts ha ha..
